  Three institutions of Chicago's vibrant cultural community – Dark Matter Coffee, Pelican, and Thrill Jockey – join in celebration of Pelican's landmark release The Fire In Our Throats Will Beckon The Thaw, which stands as a testament to the city's long history of ground-breaking artists. Pelican and Thrill Jockey's reissue of the seminal album is presented in a deluxe edition with a fresh remix and never-before-heard bonus material.
  
  For the base of this blend, Dark Matter selected a balanced washed coffee from Guatemala, Caturra, which is a natural mutation of Bourbon and parent genetic of Catuai, which is the most cultivated coffee at Finca San Jeronimo. They paired this clean, chocolate-forward coffee with a juicy, honey-processed Sarchimor, also from Finca San Jeronimo Miramar, to bring a touch of citrus and a sweet finish.
